We recently had the pleasure of collaborating with FermenStation on a delicious Probiotic Carrot + Miso dip recipe (check it out here!), and had the opportunity to learn about their story.

TELL US A BIT ABOUT YOURSELVES AND HOW YOU STARTED YOUR BUSINESS

Yuki and Yuka are partners and co-owners.

Yuki had an opportunity to join a Miso making workshop in 2016. Although Yuki has been a chef of Japanese cuisine for over 20 years, he’s never made Miso by his hands until that time. When he tasted his first handmade Miso, he was shocked by its taste and his soul trembled.

This experience changed our lifestyle from conventional to closer to nature. Also it taught the importance of making food from scratch - which includes getting muddy and growing veggies from seeds .

In 2015-2016, Yuka was mysteriously sick. Every month she had a fever, her glands were swollen all the time. She was catching cold numerous times without any particular reason. Luckily, she got an alive Miso at home which was made by Yuki and one day she realised her mysterious illness has been cured by just Miso being reintroduced in her diet.

We wanted to share this blessing and beautiful harmony of abundance from nature and Japanese tradition with everyone. We are convinced that Miso has Special medicinal benefits.

We believe that sharing high energy, healthy fermented foods is good for the mind, body, and spirit.

WHAT DOES YOUR TYPICAL DAY INVOLVE? 

Our seed ingredient is koji, which we keep at a constant temperature for 72 hours, from which we produce miso and other products.

WHAT DO YOU ENJOY MOST ABOUT WHAT YOU DO? 

The bacteria in your intestines builds who you are and strengthens your immune system. We find it most enjoyable to share the abundance of life through our products by supporting the creation of a healthy mind, body, and soul.

Traditional fermentation method

Our Miso is Kanjikomi.

Kanjikomi is fermentation method that use only naturally low winter temperature without incorporating modern ventilation systems.

Handmade Our miso is painstakingly handmade.

We carefully make each product while watching the balance of enzymes and lactic acid bacteria.

Our miso does not contain any preservatives or chemical seasonings.

WHAT ARE THE BENEFITS OF YOUR PRODUCTS? 

Miso is a wonderful Japanese fermented food that promotes bodily strength and health. Miso’s health benefits have been known and enjoyed for over 1000 years including by the samurai who used it to sustain themselves on the battlefield. Miso activates good bacteria and regulates the gut.

WHAT IS YOUR FAVOURITE WAY TO USE YOUR PRODUCTS? 

Here are some of our favourite ways to use miso paste:
Use in ramen broth. (Chilli miso is the best.)
Make miso butter
Add umami flavour to vegetarian soups and stews
Use in a pan sauce
Add to a stir-fry.
Make marinades even more flavourful.
Enhance a panko crust.
Whisk into salad dressing.
